Brewery ERO: A Journey of Fermentation and Refinement
This project introduces Makgeolli, a traditional Korean rice wine, to a wider global audience through the design of a modern brewery in San Diego. As interest in Korean cuisine and fermented beverages continues to grow, Makgeolli stands out not only for its unique taste but also for its cultural depth and health benefits—naturally rich in probiotics and amino acids.
Makgeolli has long been a drink of community and resilience, historically shared among farmers and neighbors after long days of labor. It is both humble and profound—rooted in the past, yet full of potential for contemporary relevance. As Korea looks outward, and as the U.S. becomes more curious about artisan fermentation, the timing feels right to bring this tradition to new audiences.
The design explores the concept of refinement, following the transformation of rice through fermentation into a delicate, cloudy drink. Spaces evolve from soft, organic forms into structured, linear geometries—mirroring the quiet transition from grain to Makgeolli.
More than just a production site, Brewery ERO is an architectural expression of slow transformation, cultural storytelling, and shared experience—an invitation to pause, reflect, and taste.
